Every morning at 6 o’clock we go out to our local farms and our fish supplier with 18 day boats on the Kent coast to bring the freshest local produce to our vegetable stall and fishmongers.
Our nose-to-tail butchers arrive at 7am offering cuts and offal from whole carcasses, homemade sausages and home-smoked bacon. The bakers start at 8 o’clock drawing slow proved loaves from the ovens throughout the day and our restaurant opens for a full English breakfast (weekends only) as does the Wild Goose for small plates, and excellent coffee at Gill’s Cafe and Delicatessen.
By 9am, we have a full house of specialists: a cheesemonger, wine merchant, charcuterie, general stores and bottles, as well as a selection of market kitchen covering all levels of grazing. Lunch in the restaurant on the mezzanine overlooking the market is from midday.
At 6pm the market winds down to a close and the candelabras come out in the restaurant for a no frills but beautifully cooked supper sourced from market ingredients, the menu changing twice a day. The Wild Goose bar on the market offers small plates and delicious hedgerow cocktails, while Docker draws local ciders and beers on tap, with a selection of bottles, too.
